Ingredients
  

  • 1 ½ cup Saskatoon berries fresh or frozen
  • 5 tbsp honey use maple syrup if strictly vegan
  • 2 tbsp maple syrup
  • 1 tsp lemon juice
  • 1 ¼ cup unsweetened coconut yogurt or any dairy-free yogurt
  • ½ tsp vanilla extract

Instructions
 

Cook the Berries

  • Combine Saskatoon berries, lemon juice, and maple syrup in a small saucepan. Bring to a simmer over medium heat, stirring occasionally. After 5-7 minutes, the berries should soften and begin to burst. Remove from heat.

Sweeten the Yogurt

  • In a medium bowl, mix vanilla and honey into the yogurt.

Layer or Swirl

  • Spoon alternating layers of yogurt and berry mixture into your popsicle molds, or swirl them together gently with a skewer for a marbled effect.

Freeze

  • Insert popsicle sticks and freeze for 6 hours or until solid.

Remove Molds

  • Briefly run molds under warm water to release the popsicles. Enjoy!

Notes

  • Berry Substitute: If you can't find Saskatoon berries, feel free to substitute with blueberries, blackberries, or strawberries. Frozen berries work just as well—just cook them down slightly longer.
  • Sweetener Options: Maple syrup gives a lovely depth of flavour, but you can also use agave nectar or a few drops of liquid monk fruit for a lower glycemic, diabetic-friendly option.
  • Yogurt Tips: Homemade coconut yogurt works well here, especially if it’s thick and tangy. If using store-bought, look for unsweetened varieties with live cultures for a probiotic boost.
