Because it’s so quick to put together, it makes a fantastic lunch or snack when you have last-minute lunch guests or only a few minutes to put something together.

I’ve opted to make these sandwiches with dill pickle hummus which gives a tangy, herby flavour that brings this sandwich to the next level. Regular hummus is good too, but there’s something about dill weed that I just love in creamy spreads. It brightens up the hummus giving it a refreshing lift and appetizing aroma.

This sandwich is especially delicious with soft, tender sourdough einkorn bread, which enhances the smooth creaminess of the hummus. The result is a light and elegant sandwich that’s versatile enough for any occasion.
